Characteristics and tasting advice for the VSOP "Port Cask Finish" from HSE - Habitation Saint-Etienne
Tasting
Nose
The bouquet opens with generous fruity and candied aromas, immediately marked by the influence of port casks. Notes of plum, fig, apricot and peach intertwine in a gourmand register dotted with gentle spices. In the background, the herbal and vegetal touches characteristic of rhum agricole persist, forming the identity backbone of this cuvée. Vanilla unfolds in the second layer, accompanied by toasted almonds, caramel and clove. With aeration, the profile evolves toward more woody tones, revealing nuances of prunes and dried fruits.
Palate
The attack is ample and warm, soft and enveloping, reflecting the maturity gained through aging. Natural sweetness is balanced by a hint of pepper and measured spiciness that preserves harmony. Dried fruits dominate the mid-palate, lending a round and indulgent texture. Slightly toasted notes and a thread of caramel accompany the development. The finish, with beautiful persistence, reveals flavors of dried fruits, black pepper and cherry, with subtle nuances of tobacco.
Pairings and tasting occasions
This rum is ideally enjoyed neat, at room temperature, in a tulip glass allowing the full expression of its aromatic richness. The VSOP "Port Cask Finish" pairs naturally with dark chocolate, aged cheeses, dried fruits and caramel desserts, echoing the legacy of the port that shaped its maturation.
An aged Martinique rum enhanced by finishing in port casks
HSE - Habitation Saint-Etienne: heritage and innovation
Founded in 1882 by Amédée Aubéry on the remains of the La Maugée sugar factory in northern Martinique, HSE - Habitation Saint-Etienne embodies more than a century of expertise. The estate, listed as a Historic Monument since 2006, is now owned by the Hayot family. Distillation takes place on historic Creole columns, while aging continues on the original site. The estate stands out through the use of new oak casks for its initial aging and through a pioneering program of finishes in prestigious wine and spirits casks.
The VSOP "Port Cask Finish": between tradition and exceptional finishing
The VSOP "Port Cask Finish" is produced from freshly pressed pure sugarcane juice. After distillation in a Creole column still, the spirit is aged for a minimum of three years in new American oak casks, in accordance with the estate’s distinctive protocol which systematically favors new casks to ensure the consistency and aromatic complexity of its cuvées.
This Martinique Rum is then transferred for a second maturation of more than eight months in 225‑liter port casks that previously held vintage or tawny ports. This smaller format intensifies contact with the wine‑soaked wood, encouraging richly complex aromatic interactions. The development of this finishing program represented a true innovation, revealing a dynamic extraction in which the agricole character reasserts itself alongside the imprint of the port.
