Tasting
Nose
The nose reveals an elegant bouquet of roses, accompanied by notes of lemon verbena and chamomile.
Palate
The palate is round yet fluid, evoking acacia honey and mirabelle plum. The whole offers a generous, full-bodied texture.
Food pairings and tasting occasions
This sake pairs particularly well with raw cauliflower with vinegar, a sea bass carpaccio served with turnip purée, or a Bleu du Gers. The ideal serving temperature is between 6 and 12 °C to fully appreciate its delicate aromas.

A modern sake from Yamaguchi with a smooth, fruity profile
Ohmine, the embodiment of the revival of an ancestral Japanese sake
Founded by Takeshi Akiyama in the Yamaguchi region on the island of Honshū, the House Ohmine is an essential reference in the world of sake. After returning from the United States in 2010, Akiyama, the current owner, revived his grandfather’s brewery, which had been closed for fifty years. Following major renovations in 2018, he modernized both the production facilities and the packaging, while preserving the authenticity of the terroir. Ohmine’s hallmark lies in the use of exceptionally hard water from the Akiyoshidai plateau, giving its sake a remarkable smooth, fruity profile, with signature floral and fruit notes.
Ohmine 2 Grain: a sake made with highly polished rice
2 Grain is crafted from Yamada Nishiki rice with a 35% polishing ratio, reflecting meticulous work on the raw material. This cuvée is in line with the House’s decidedly modern philosophy, which does not refer to its sakes by traditional classification, placing greater emphasis on tasting without preconceptions. The brewing water, particularly hard by Japanese standards, comes from the Akiyoshidai plateau and contributes to the unique character of this ample, generous sake. The product is presented in a case, reflecting the attention given to the House Ohmine’s modern packaging.
