Tasting
Colour
The wine displays a deep straw-yellow colour, both clear and brilliant.
Nose
Precise and clean, the nose reveals aromas of white flowers and linden blossom, mingled with notes of fresh citrus such as lemon. Subtle vegetal touches reminiscent of celery blend with saline nuances.
Palate
The attack is fresh, giving way to a lithe palate carried by lovely acidity and pronounced savouriness. The texture is elegant, offering a fruity profile without any heaviness. The long, lingering finish is marked by a strong mineral and saline tension.
Food and Wine Pairings
This white wine pairs ideally with seafood, notably seafood antipasti, pasta with sardines or grilled swordfish. It also works very well with richer Sicilian specialities such as arancini.
Serving and Cellaring
To fully appreciate this Etna 2025, we recommend serving it at a temperature between 8 and 10 °C. It is ideal for enjoying in its youth to make the most of its freshness, but its structure allows it to evolve favourably in the cellar for a few years.
The Mineral Freshness and Elegance of a White Wine from Etna
The Estate
Founded in 2002 by Marco de Grazia, Tenuta delle Terre Nere quickly established itself as a benchmark in Sicily. Now run by Marco and his brother Iano de Grazia, the estate extends over approximately 55 hectares on the northern slope of Mount Etna. A pioneer in showcasing volcanic terroirs, the estate farms its vines organically. Thanks to a meticulous parcel-by-parcel approach, Terre Nere produces distinctive wines that precisely express the geological richness and freshness of this unique high-altitude terroir.
The Vineyard
The grapes for this cuvée come from parcels spread across the northern, southern and eastern slopes of Etna, at altitudes ranging from 600 to 950 metres. This volcanic terroir is characterised by black soils, rich in minerals and low in organic matter, formed by various lava flows. The vines, with an average age of 5 to 15 years for this wine, are trained using the traditional bush vine system (alberello) and on trellises. The vineyard is certified organic, benefiting from a wide diurnal temperature range and natural ventilation that keep the grapes healthy.
Vinification and Ageing
After hand harvesting carried out towards the end of September, the grapes are gently pressed. The must is then clarified by static cold settling. Alcoholic fermentation of this Etna 2025 takes place exclusively in stainless steel tanks at rigorously controlled temperatures of between 13 and 15 °C, in order to preserve aromatic purity. Ageing continues in the same stainless steel tanks for approximately five months. The wine is finally filtered before bottling.
Grape Varieties
This blend is made up of 70% Carricante, 20% Catarratto, 5% Grecanico and 5% Inzolia.
