Tasting
Appearance
A beautiful ruby-hued robe.
Nose
Rich, the nose releases notes of roasted aromas, cade wood and dried fruits.
Palate
Opening on indulgent aromas of gingerbread, the palate reveals balsamic and peppery notes (white pepper and Sichuan pepper) throughout the tasting.
Serving
For an optimal tasting, serve between 15 and 17°C after decanting the wine for about an hour.

The vineyard
Xavier Vignon unveils old vintages of Châteauneuf-du-Pape wines, releasing all the aromatic potential and richness of this iconic appellation. This 2000 vintage is crafted from a selection of parcels lying on soils composed of sand, rolled pebbles and red clay.
Vinification and ageing
Aged in various containers, including large casks and demi-muids.
Blend
Grenache (80%)
Mourvèdre (15%)
Cinsault and Syrah (5%).
