This vintage of the second wine of Château Pavie is a blend of 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon and was matured 50% in new and 50% in one-year-old French oak barrels. Deep garnet-purple colored, the 2015 Arômes de Pavie reveals a beguiling nose of smoked meats, fragrant earth and sautéed herbs over a core of warm red and black plums, cherry compote and blackberry pie plus a waft of dried lavender. Medium to full-bodied, the palate reveals very fine and ripe yet wonderfully firm tannins plus a seamless backbone of freshness supporting the generous fruit, finishing long with wonderful restraint and elegance.

It is going to need a good six to eight years to relax, making it one of the less approachable second wines in this vintage for those looking for early drinking, but it does establish itself as a strong personality with a clear Pavie signature.

Black cherry, chocolate, new leather and plum flesh out to give this sumptuous, racy Saint-Émilion its inviting personality. Racy and alluring, the Arômes is a gorgeous wine that may very well hold some surprises down the road. Tasted two times.

It comes barreling out of the glass with notions of stewed black plums, dried mulberries, and tobacco leaf, plus wafts of Indian spices and smoked meats. Full-bodied, the palate is ripe and juicy with firm, chewy tannins and fantastic tension, finishing long and decadent.

Tasting

Color

The color reveals a deep garnet-purple hue with dark highlights.

Nose

The nose opens with aromas of smoked meat and earth, accompanied by sautéed herbs. After aeration, notes of ripe dark fruits emerge, with nuances of warm plums, cherry compote and blackberry tart. A touch of dried lavender completes the bouquet, while notes of cedar, sandalwood, toasted walnut and roasted coffee add complexity.

Palate

On the palate, this wine offers a medium- to full-bodied profile with firm, polished tannins. Dark fruits dominate the palate, supported by a pronounced minerality that brings freshness. The finish lingers with notes of oriental spices and licorice, revealing a velvety, harmonious texture.

Food and wine pairings

Arômes de Pavie 2015 pairs perfectly with roasted or grilled red meats, notably herb-roasted leg of lamb, braised beef or rabbit stew. It also matches very well with full-flavored hard cheeses.

Serving and cellaring

This wine can be enjoyed now after one hour of aeration, but will gain in complexity with a few additional years in the cellar. It can be kept until at least 2034. Ideally serve between 16 and 18°C.

A second wine from Saint-Émilion with a sunny character

The estate

The origin of the estate is very ancient. Vines have been grown on the slopes of what is now Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1er Grand Cru Classé “A”, boasts one of the finest terroirs in Saint-Émilion. Château Pavie is renowned for the structure and elegance of its wines.

From 2005, Arômes de Pavie became the label of Château Pavie’s second wine, succeeding Château Tour Simard.

The vineyard

Château Pavie’s vineyard spans 37 hectares on the south-east slopes of the limestone plateau of Saint-Émilion. The brown soils, combining limestone, clay and sand, provide drainage and precision. Optimal exposure and high elevation encourage balanced phenolic ripening. The grape varieties are Merlot, Cabernet Franc and Cabernet Sauvignon, with meticulous hand harvesting. This second wine from Château Pavie comes from young vines under ten years old, as well as lots not selected for the grand vin.

The vintage

The 2015 vintage in Saint-Émilion stands out for exceptional weather conditions. After a mild spring, the hot, sunny summer allowed ideal heat accumulation, tempered by cool nights that preserved natural acidity. Harvest took place under optimal conditions, enabling grapes to be picked at perfect ripeness with a remarkable balance between concentration and freshness.

Winemaking and aging

Arômes de Pavie 2015 is vinified in the estate’s 20 temperature-controlled wooden vats. After alcoholic fermentation and controlled maceration, the wine is aged in French oak barrels, 50% new and 50% one-wine barrels, for 18 to 24 months. This method allows the oak notes to integrate harmoniously with the wine’s tannic structure.
