The Elegance and Freshness of a Californian Red Wine from Old Century-Old Vines
The Estate
Founded in 2008 by John Locke and Alex Krause in Santa Cruz, California, Birichino embodies a respectful and natural winemaking philosophy. These former collaborators of Bonny Doon Vineyard have developed a minimalist approach favoring indigenous yeasts, creating wines recognized for their authenticity and pure expression of the Californian terroir.
The Vineyard
This "Scylla" cuvée is a wine from the California appellation, crafted from the century-old vineyards of Montague and Mule Plane (Carignan) and Besson (Mourvèdre), resting on loamy and sandy soils.
Winemaking and Aging
Manual harvesting followed by vinification with indigenous yeasts. The harvest is destemmed, except for half of the Carignan. Alcoholic and malolactic fermentations are carried out in "neutral" barrels before aging for 8 months in the same container.
Blend
78% Carignan and 22% Mourvèdre.
