Tasting
Appearance
The wine displays a deep, brilliant rosé hue with garnet and bright red highlights reminiscent of pomegranate. It is enhanced by an exceptionally fine and beautifully creamy mousse.

Palate
Ample and fleshy, the palate offers a vinous texture supported by a lively, refreshing acidity. The unctuous effervescence envelops vibrant fruity flavours that stretch into a long, harmonious finish.
Food and wine pairings
This gastronomic champagne pairs wonderfully with characterful dishes such as white meat, poultry, fine charcuterie or lightly spiced dishes.
Serving and cellaring
With its fine structure, the Rosé de Saignée Les Beaudiers Oenothèque 2016 has an estimated ageing potential of twelve years, allowing it to be enjoyed until around 2028.
Other characteristics

The complexity and elegance of a rosé champagne by Laherte Frères
The estate
Founded in 1889 by Jean-Baptiste Laherte, the house of Laherte Frères is located in Chavot-Courcourt, in the heart of the Champagne region. This family estate of just over 11 hectares is now run by the sixth and seventh generations, represented by Thierry, Christian and Aurélien Laherte. Committed to an approach that respects living ecosystems, with organic and biodynamic practices, the estate stands out for its meticulous plot-by-plot approach. It crafts authentic, sincere cuvées that reflect the purity and diversity of its Champagne terroirs.
The vineyard
The Les Beaudiers lieu-dit lies on the mid-slopes of Chavot, in the Coteaux Sud d'Épernay in Champagne. Facing north-east, these old vines, planted in 1953, 1958 and 1965, enjoy moderate sunshine that preserves the freshness of the berries. The terroir consists of shallow clay-silt soils scattered with small stones, schist and flint, resting on a subsoil of Sparnacian chalk. The vineyard is farmed using ecological methods, with an emphasis on regular ploughing and short pruning.
Winemaking and ageing
The grapes are harvested by hand at optimal ripeness, then destemmed. The Rosé de Saignée Les Beaudiers Oenothèque 2016 is produced through a maceration of 12 to 14 hours to extract colour. Alcoholic fermentation takes place slowly and spontaneously in barrels, driven by indigenous yeasts. To preserve a fine tension, malolactic fermentation is avoided. This rosé champagne is then aged on fine lees for around six months with regular bâtonnage, before undergoing extended ageing sur lattes. Disgorgement is carried out by hand, à la volée.
