Description
A very aromatic Saint-Émilion wine of great refinement
The estate
Nestled at the heights of the limestone plateau of Saint-Émilion, Château Canon enjoys an exceptional location. Located on the right bank of Bordeaux, the superb estate takes its name from the famous sailor and corsair of the King, Jacques Kanon. It was in 1954 that Château Canon became a Premier Grand Cru Classé of Saint-Émilion.
The vineyard
The Château Canon Premier Grand Cru Classe vineyard covers 24 hectares. The vines are planted in clay-limestone soils.
The vintage
The 2020 vintage was marked by an exceptionally warm winter, followed by a very rainy spring. While the summer was particularly hot and dry, the autumn rain made its appearance after the solstice.
Vinification and ageing
Manual harvest in crates. Manual sorting. Plot-based vinification, gravity vatting in thermo-regulated tapered stainless steel vats. Gravity flow. Malolactic fermentation (1/3 new barrels, 2/3 vats). Ageing lasts 18 months in barrels (50% new).
The blend
The Château Canon 2020 is made from a blend of Merlot (68%) and Cabernet Franc (32%).
The tasting
Nose
The first nose reveals delicately peaty fragrances complemented by notes of cedar. Airing exudes fruity notes and a nose of beautiful complexity.
Palate
Revealing the splendour of the vintage, the palate seduces with its ample, juicy and creamy attack, as well as its aromas of ripe fruit (raspberry, morello cherry). Precise and persistent, the finish is marked by its salinity and its invigorating minerality which bears the signature of the limestone plateau and confers a very nice freshness.
