Appearance
The colour reveals a beautiful pale yellow hue, enhanced by brilliant golden highlights.
Nose
The nose opens with refreshing notes of citrus and pear, harmoniously complemented by a delicate floral touch reminiscent of acacia blossom.
Palate
The attack is crisp and perfectly balanced. The palate charms with its generous volume, extending into a delicate, particularly mouth-watering finish.
Food and Wine Pairings
This white wine pairs beautifully with white fish served with a lemon sauce, seafood, or even ceviche. It will also shine alongside white meats, herb-roasted poultry, a green vegetable risotto, or soft-rind cheeses such as brie or fresh goat cheese.

The Precision and Freshness of a White Wine from Beaujolais
The Estate
Founded in 1676, Château de La Chaize is a historic and essential estate in Beaujolais, located in Odenas. Renowned for its exceptional architectural heritage listed as a Historic Monument, it was acquired in 2017 by Christophe Gruy. Today, under the operational leadership of Boris Gruy, the estate spans 150 hectares of vines. The domaine stands out for its strong environmental commitment, having obtained organic farming certification in 2022, along with an ambitious approach focused on agroecology, carbon neutrality, and parcel-by-parcel winemaking.
The Vineyard
Grown within the Beaujolais winegrowing area, this wine comes from a specific plot located at the heart of the famous golden stone villages. The Chardonnay vines thrive on clay-limestone soil with an east-facing exposure. This ideal orientation allows for slow, gradual ripening of the grapes while preserving a beautiful natural freshness.
The Vintage
The year 2025 was marked by particularly mild and sunny weather, giving the grapes generous ripeness and optimal maturity.
Winemaking and Aging
After mechanical harvesting, the must is clarified before undergoing fermentation under rigorous control. To preserve vibrant acidity and great tension, part of the cuvée does not undergo malolactic fermentation. The wine is then aged for 10 months exclusively in stainless steel tanks, with no contact with wood, thus preserving the full aromatic purity of the fruit. Bottling takes place under protective atmosphere.
