The elegance of a red wine from Saint-Émilion by Château Pavie-Décesse
The property
Château Pavie-Décesse is a Grand Cru Classé of the Saint-Émilion appellation whose vineyard covers an area of 3.65 hectares. Aged 52 years on average, the vines are planted on a terroir representative of the limestone plateau of Saint-Émilion, composed of clay-limestone soil over Asteria limestone.
Vinification and ageing
Strictly adapted to the harvest, the vinification is carried out in temperature-controlled oak vats. Malolactic fermentation is carried out in barrels, as is ageing (80% new barrels and 20% second-fill barrels).
The blend
The Château Pavie-Décesse 2020 is made from a blend of Merlot (88%) and Cabernet Franc (12%).
