The property

The history of the estate dates back to 1984, when Didier Montchovet, a winemaker's son from Nantoux, bought a 0.5 hectare plot. Passionate, he adopted biodynamic practices from the start, thus becoming the first estate certified by Demeter. His visionary commitment to respecting the terroir accompanied the gradual expansion of the estate. Boris Champy, former technical director of Louis Latour, took over the estate while respecting this same philosophy, while bringing his expertise and enthusiasm. Today, the Domaine Boris Champy extends over 12 hectares, including plots on the Hautes-Côtes de Beaune and Pommard, emblematic Burgundy terroirs.

The vineyard

The Bourgogne Hautes-Côtes de Beaune "Élévation 382" comes from the "Montagne de Cras" plot, located at an altitude of 382 meters. This unique terroir, composed of clayey and stony soils, is rich in biodiversity. The 3 hectares of vines are surrounded by natural areas housing limestone meadows, hedges, orchards and rare species such as orchids and service trees. The vines are traditionally managed, pruned in simple Guyot style, with a high density of 10,000 plants per hectare.

Vinification and ageing

The grapes are harvested manually at full maturity. The vinification is gentle, with a small proportion of whole harvest, and takes place in wooden vats. The ageing is carried out over a period of 12 months, 15% of which is in new barrels, providing a subtle balance between freshness and woody complexity.
