Tasting

Colour
The colour reveals a golden hue with subtle pale grey glints.

Nose
The aromatic bouquet opens with notes of citrus, particularly lemon, and pear. It then evolves toward touches of honey, vanilla, and delicate almond blossom scents.

Palate
The palate stands out for its sapidity and pronounced saline minerality. The balance between richness and acidity offers a precise structure, leading to a taut, mouth-watering finish.

Food and wine pairing

This white wine pairs perfectly with raw seafood preparations such as salmon or scallop tartare, as well as oysters. It also pairs beautifully with poached poultry with chestnuts, delicate white fish, or vegetable and legume-based dishes.

Service and storage

For optimal tasting, it is recommended to open the bottle of the 2023 Llum in advance to allow it to breathe. This wine can be enjoyed now or cellared until around 2033.

The Mineral Elegance of a White Wine from Roussillon

The estate

Founded in 2001 by Marjorie Gallet, later joined by Stéphane Gallet, Domaine Le Roc Des Anges has established itself as a benchmark in Roussillon. Located in Montner, the estate takes its name from a vein of white quartz running through its schist soils. Guided by a philosophy of respect for the living world, the estate practices biodynamic viticulture to reveal the true identity of its terroir. Since September 2023, Thibault Ponthier has been the estate's current owner, working closely with the founders to carry forward the property's vision.

The vineyard

Classified as IGP Côtes Catalanes, the vineyard thrives on the north-facing slopes of the Força Réal mountain, in the Pyrénées-Orientales. This distinctive terroir consists of shallow soils of ancient schist and quartz, rich in iron and silica. The vines, most of which are between seventy and over a hundred years old, are cultivated according to biodynamic principles. The northern exposure, combined with local winds, helps preserve the freshness of the berries while naturally maintaining low yields.

Winemaking and aging

Hand-harvested grapes in small crates are followed by whole-bunch pressing without skin maceration. The fermentation of the 2023 Llum takes place using indigenous yeasts in various vessels, including 500-litre wooden foudres and 228-litre barrels, within an underground cellar. The wine then undergoes eight months of aging in these same vessels, followed by light filtration before bottling.

Grape varieties

This wine is a blend of Grenache Gris and Macabeu, complemented by a small proportion of Grenache Blanc.
