The bouquet reveals a complex aromatic profile marked by red fruits, notably black cherry. Notes of spice mingle with hints of undergrowth, giving the whole a lovely aromatic depth.

An elegant, complex Jura trousseau from biodynamic viticulture

The estate

A family-run estate based in Montaigu in the Jura, the Domaine Pignier is now managed by three siblings carrying on several generations of winegrowers. A biodynamic pioneer since the late 1990s and Demeter-certified since 2003, the estate grows emblematic Jura grape varieties in the AOC Côtes du Jura on the limestone and marl soils of the Revermont, with all work carried out entirely by hand.

The vineyard

The "Les Gauthières" cuvée comes from the named site of Montaigu, with a south and south-east exposure. The vineyard sits on Sinemurian gryphaea limestones. The vines are farmed biodynamically (Demeter-certified) and grown as an interplanted field blend combining Trousseau from the family’s massal selection, Trousseau Noir, Enfariné and Savagnin Jaune. Harvesting is carried out by hand with sorting in the vineyard.

Winemaking and aging

The Trousseau "Les Gauthières" 2023 is fully destemmed, then put into tank with no added SO2. Aging takes place over 10 months in barrels. This natural wine is bottled by gravity on a fruit day in the lunar calendar, unfiltered, with a natural cork closure.

Trousseau complemented by Trousseau Noir, Enfariné and Savagnin Jaune in an interplanted field blend.
