The estate
Founded in 1204 by the Knights Templar, the Commanderie de Peyrassol is one of the most historic wine estates in France. Acquired in 2001 by Philippe Austruy, the property spans nearly 850 hectares, around one hundred of which are planted with vines, nestled in the foothills of the Massif des Maures in Provence. Now managed by Alban Cacaret, the owner’s nephew, Peyrassol combines eight centuries of heritage with modern viticultural practices, achieving organic certification in 2022. The estate stands out for its environmental commitment and its dedication to preserving the site’s exceptional biodiversity.
The vineyard
#Lou De Peyrassol 2025 comes from selected plots within the estate and partner vineyards cultivated organically in the Côtes de Provence appellation. The vines benefit from a privileged location between the Massif des Maures and the Mediterranean, about ten kilometers from the sea. This geographical setting provides a temperate Mediterranean climate, with generous sunshine and natural protection from the surrounding oak and pine forests. The soils, mainly composed of Triassic limestone marl, give the wines their minerality and vibrancy.
The vintage
Winter in Provence was marked by dry conditions, followed by a spring characterized by climatic instability with episodes of frost and hail that spared Peyrassol’s main plots. Summer then brought radiant sunshine under warm and dry conditions, allowing optimal grape ripening. The absence of excessive rainfall during the harvest resulted in a vintage with strong character, producing wines with bright colors, clear aromas, and well-balanced acidity.
Winemaking and aging
After harvest, the grapes for #Lou De Peyrassol 2025 are gently pressed using pneumatic methods to minimize oxidation and skin contact. The juice is then vinified traditionally in temperature-controlled stainless steel tanks, preserving the wine’s aromatic freshness and fruity character. After fermentation, the wine is aged on fine lees in stainless steel tanks for several months, encouraging gentle evolution while maintaining the aromatic qualities and lively character typical of elegant Provence rosés.
