Tasting notes
Appearance
The wine displays a bright pale yellow hue with light golden reflections, heralding a dry white that is both ripe and refreshing.
Nose
Complex and expressive, the nose opens with aromas of white and yellow fruits such as pear, peach and apricot, complemented by notes of white flowers, citrus and a subtly honeyed touch.
Palate
The attack is ample and generous, carried by beautiful fruit ripeness. The mid-palate reveals an aromatic depth, with richness and a well-integrated freshness. The finish, long and elegant, is drawn out by a lively acidity and a few delicate bitter notes that bring relief and tension.
Food and wine pairings
This white wine pairs ideally with seafood and fine fish, such as pan-seared scallops, grilled fish or fish in a lemon sauce. It also accompanies pan-fried foie gras beautifully, as well as refined vegetarian cuisine based on seasonal vegetables, and goat or sheep cheeses.
Serving and cellaring
This Mas de Daumas Gassac 2021 Blanc is best enjoyed at a serving temperature of 10 to 12°C, preferably after a brief decanting to release its full aromatic palette. It can be appreciated now for its vibrant freshness, or cellared for a harmonious evolution until 2028 at the earliest.
The expression and finesse of a white wine from Languedoc
The estate
Founded in 1970 in France, the Mas de Daumas Gassac estate stands out for its singular approach. This emblematic Languedoc estate, today led by the Guibert family, extends over 120 acres of vines nestled in the heart of 350 acres of forest. A pioneer of artisanal viticulture, the estate is renowned for its cuvées outside of classic appellations. Although world-famous for its red wines, the estate also produces white and rosé wines, always with the utmost respect for biodiversity.
The vineyard
Located in the Haute Vallée du Gassac, this Languedoc terroir benefits from the IGP Saint-Guilhem-le-Désert designation. The plots are planted in small clearings surrounded by garrigue, creating a cool microclimate that promotes slow ripening of the grapes. The vines grow on soils combining alluvium, limestone and clay. Cultivation is carried out without chemical fertilisers or synthetic molecules, with low yields and the exclusive use of ancient, non-cloned varieties.
The vintage
This year's harvest took place under conditions that allowed for optimal ripeness. The grapes were picked entirely by hand between 16 and 24 September, ensuring a meticulous selection of the berries while preserving their freshness.
Winemaking and aging
The making of this white wine relies on a skin maceration of a few days at low temperature, followed by pressing and fermentation in stainless steel tanks at controlled temperature. Aging continues for several months in stainless steel tanks, on fine lees, in order to preserve the purity of the fruit and the aromatic freshness, without recourse to barrel aging.
Grape varieties
This white wine comes from a blend dominated by Viognier, Petit Manseng, Chardonnay and Chenin, complemented by a proportion of rare and ancient grape varieties that contribute to its aromatic complexity and singularity.
