Tasting
Color
The color reveals an intense cherry red hue, enhanced by delicate ruby highlights.
Nose
Displaying beautiful complexity, the nose first exhales deep aromas of well-ripened black fruits such as blackberry, plum, and blackcurrant. Aeration reveals subtle floral notes, harmoniously blended with spicy touches of anise, licorice, vanilla, and coconut, inherited from its time in oak barrels.
Palate
Both powerful and balanced, the palate seduces with its freshness and structure. The silky texture is supported by particularly polished and refined tannins. One finds ripe red and black fruit flavors, complemented by balsamic nuances, sweet spices, and light coffee notes. The finish stands out for its length and persistence.
Food and wine pairing
This red wine from Spain pairs wonderfully with dishes of character. It will ideally accompany roasted suckling pig, game meats in sauce, a fine grilled cut of beef, or aged hard cheeses and high-quality charcuterie.
Service and storage
To fully appreciate the "Reserva" 2022, it is recommended to decant it at least one hour before tasting and to serve it at a temperature between 16 and 18°C. This wine, built to age, can be cellared until approximately 2032.
Other characteristics
This wine has an alcohol content of 15.5% vol. Bottled without clarification or chemical stabilization, it may present a slight natural sediment at the bottom of the bottle, evidence of a minimal-intervention production process.
The intensity and complexity of a Ribera del Duero wine
The estate
Officially founded in 1996 by Paco Rodero and Conchita Villa, the bodega Pago de los Capellanes quickly established itself as an essential reference in Castile and León. Now led by their daughter, Estefanía Rodero Villa, the estate oversees a vineyard spanning 125 to 200 hectares. Divided into 35 distinct plots, the estate stands out for its philosophy centered on precision and respect for the terroir, favoring very limited yields to express the full quintessence of its environment.
The vineyard
Located in the heart of the Ribera del Duero appellation, the vineyard rises to 800 meters in altitude on particularly poor, clay-limestone and stony soils. This unique terroir is subject to an extreme climate, marked by strong temperature swings between scorching summer days and very cool nights. The grapes used in this cuvée come exclusively from the estate's oldest plots, home to eighty-year-old vines cultivated according to organic farming principles.
The vintage
The year 2022 was marked by particularly difficult weather conditions. This adverse climate naturally limited the vines' vegetative growth, resulting in historically low yields for the estate, but in turn guaranteeing a remarkable concentration in the berries.
Winemaking and aging
After manual harvesting in small crates, the grapes undergo a three-day cold pre-fermentation maceration. Alcoholic fermentation takes place in stainless steel tanks with indigenous yeasts, under strict temperature control, followed by spontaneous malolactic fermentation in barrels. The "Reserva" 2022 is aged for 18 months in new extra-fine-grain French oak barrels, with regular rackings. The wine then rests for at least an additional 18 months in bottle before release.
