The bouquet is complex, combining elegant mineral notes with rich aromas of ripe fruit.
Palate
The attack is round and well-structured. The wine stretches into a finish that is both tangy and saline, with excellent aromatic persistence.

The mineral elegance of a great Chablis from Simonnet-Febvre
The estate
Founded in 1840 by the cooper Jean Febvre, Simonnet-Febvre is a true institution in Burgundy. Located in the heart of the Yonne, it is also the only Chablis house to produce Crémant de Bourgogne. Acquired in 2003 by the renowned Maison Louis Latour, the estate is now run with great energy by Paul Espitalié. It farms around twenty hectares of vines, complemented by fifteen hectares in the Coteaux de l'Auxois. Combining tradition and modernity, this historic house also stands out for its organic certification, obtained in 2018.
The vineyard
The vines that produce this Chablis thrive on the right bank of the Serein, directly adjoining the famous Grands Crus. With an average age of 35 years, the vineyard enjoys a fine south-west exposure along the ancient Roman road linking Auxerre to Tonnerre. The vines draw their distinctive character from an exceptional terroir of Kimmeridgian clay-limestone soils.
Winemaking and ageing
Fermentation takes place in stainless steel tanks, at carefully controlled temperatures of between 17°C and 21°C. The wine is then carefully aged for twelve months on fine lees: 75% in stainless steel tanks to preserve its freshness and 25% in oak barrels to add further complexity.
Grape variety
This wine is made from 100% Chardonnay.
