Colour

Service and storage
To fully appreciate this Chablis 1er Cru "Côte de Léchet" 2021, it is recommended to serve it at a temperature of between 10 and 12°C. Its ageing potential allows it to be kept in the cellar and enjoyed until around 2026.
The pure, mineral expression of a great Chablis by Simonnet-Febvre
The estate
Founded in 1840, the house of Simonnet-Febvre is a historic figure in Burgundy, based in the Yonne. Acquired in 2003 by the renowned house of Louis Latour, its current owner, it is now led by Paul Espitalié. The estate cultivates 20 hectares of vineyards, certified organic since 2018. This house is also distinguished by its unique expertise, being the only one in its region to craft Crémant de Bourgogne using the traditional method, alongside its great still wines.
The vineyard
The vines behind this Chablis cuvée thrive on the left bank of the Serein. They benefit from a favourable south-east exposure and sunshine that encourages early grape ripening. With an average age of 35 years, the vines grow in poor, very stony soil, typically composed of Kimmeridgian clay-limestone. Yields are naturally low, averaging around 58 hl/ha.
Winemaking and aging
The grapes harvested for the Chablis 1er Cru "Côte de Léchet" 2021 are vinified exclusively in stainless steel tanks, with fermentation temperatures carefully controlled between 17 and 21°C. The wine then undergoes ageing on the lees for 12 months to develop its complexity and texture.
