Tasting
Appearance
In its youth, the wine reveals a pale yellow hue adorned with green highlights, gradually taking on more golden nuances over the years.
Nose
The aromatic bouquet immediately unveils fruity, mineral and iodised notes. With time, it becomes enriched with indulgent aromas of candied fruits, butter and vanilla, complemented by hints of hazelnut, toasted bread and tobacco.
Palate
The palate proves rich, taut and complex all at once, carried by a beautiful minerality. The whole shines through its power and balance, extending onto a finish of remarkable length.
Food and wine pairings
This white wine sublimates seafood and scallops. It also pairs wonderfully with fish in sauce, white meats or a veal sweetbread.
Serving and cellaring
To fully appreciate the Chablis 1er Cru "Mont de Milieu" 2024, it is recommended to serve it at a temperature between 10 and 12°C. Endowed with fine ageing potential, it can be enjoyed until around 2032.

The estate
Founded in 1840, the Simonnet-Febvre House is a true institution located in Chablis, Burgundy. This historic estate, which extends over approximately 20 hectares of vines certified organic since 2018, has managed to preserve its identity while modernising. Today, the property belongs to the Maison Louis Latour group, which perpetuates the expertise of this iconic brand. Both an estate and a négociant house, Simonnet-Febvre produces wines renowned for their purity and their faithfulness to the terroirs of Chablis and the Grand Auxerrois.
The vineyard
This Premier Cru comes from the Mont de Milieu hillside, a terroir historically known for marking the ancient border between Champagne and Burgundy. The vines, averaging 40 years old, thrive on a Kimmeridgian Jurassic soil typical of Chablis. Facing south and south-east, this plot benefits from optimal sunshine and higher temperatures, promoting excellent grape ripeness. The yield of this vineyard is kept to 56 hl/ha.
Winemaking and ageing
The making of the Chablis 1er Cru "Mont de Milieu" 2024 begins with fermentation in stainless steel vats at controlled temperatures between 18 and 20°C. Ageing then takes place on fine lees for 12 months. To perfect the wine's structure, this stage is carried out 75% in stainless steel vats to preserve freshness, and 25% in oak barrels to bring additional complexity.
