Appearance
This wine reveals a lovely bright, pale golden hue.
Nose
The aromatic bouquet opens with pleasant floral scents, dominated by notes of acacia.
Palate
The attack is round and full of elegance. The palate offers delicious touches of ripe pear and peach, enhanced by complex nuances. The finish lingers on a beautiful, perfectly balanced minerality.
Food and wine pairings
This cuvée will pair wonderfully with seafood, fish, poultry or goat cheese.
Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature of 12 °C. It can be enjoyed now or kept in the cellar until at least 2028.
The authentic expression of a great Chablis terroir by Simonnet-Febvre
The estate
Founded in 1840 by the cooper Jean Febvre, the Simonnet-Febvre House is a historic institution located in the heart of the Chablis appellation. A true jewel of Burgundy, this estate has belonged to the Maison Louis Latour since 2003 and is now run by Paul Espitalié. It cultivates around five hectares of its own vines and stands out for its unique identity, being the only Chablis house still producing Crémant de Bourgogne. Firmly turned towards the future, the estate is committed to an environmental approach, with several cuvées certified organic, while showcasing the richness of the Grand Auxerrois terroirs.
The vineyard
The grapes for this cuvée come from the estate's original vines. More precisely, the plot is located in the lower part of the Chapelots sector. Averaging 35 years of age, these vines thrive on a typical terroir composed of clay resting on a Kimmeridgian limestone bedrock.
Vinification and ageing
The creation of the Chablis Village "D1840" 2023 is based on a meticulous process. Fermentation takes place 65% in stainless steel tanks and 35% in oak barrels aged three to five years. Ageing follows the same proportions and lasts for 15 to 18 months on fine lees, bringing texture and beautiful complexity to the wine.
