Tasting notes
Appearance
This wine reveals a beautiful pale gold hue, enhanced by delicate green highlights. Its appearance is both crystal-clear and remarkably bright.
Nose
The aromatic bouquet opens with a lovely freshness, blending elegant floral scents with deeply mineral notes.
Palate
On the palate, the attack is lively and straight. The texture displays a strikingly mineral framework, supported by a superb balance between fine tension and great elegance.
Food and wine pairings
This cuvée will pair wonderfully with a seafood platter, oysters or shellfish. It will also brilliantly accompany grilled fish, as well as white meats served with a creamy sauce, or goat's cheeses.
Serving and cellaring
To fully appreciate this Chablis 1er Cru "Côte de Léchet" 2024, it is recommended to serve it chilled, at a temperature between 10 and 12°C. With its lovely ageing potential, it can be kept in the cellar and enjoyed until around 2029.
The pure expression of a great Chablis terroir by Simonnet-Febvre
The estate
Founded in 1840 in the heart of Burgundy, the Simonnet-Febvre House is a historic institution of Chablis. Initially renowned for its sparkling wines, this iconic name has been able to preserve its identity while modernising. Since 2003, it has been owned by the famous Maison Louis Latour. Today led by Paul Espitalié, the estate operates as a négociant-owner and stands out through a major transition to organic farming, seeking to express with the utmost purity the diversity of the Grand Auxerrois terroirs.
The vineyard
The grapes come from a plot ideally located on the left bank of the Serein, benefiting from a fine south-easterly exposure. This terroir, so typical of Chablis, rests on a Kimmeridgian clay-limestone soil, particularly poor and stony. These demanding geological conditions naturally limit the vine's vigour, thereby favouring small yields and optimal ripeness of the berries. The vines, averaging 35 years old, produce around 58 hl/ha, drawing from this substrate all the tension and minerality characteristic of the appellation.
Winemaking and ageing
In order to preserve the brightness of the fruit and the identity of the terroir, the making of this Chablis 1er Cru "Côte de Léchet" 2024 takes place exclusively in stainless steel tanks. Alcoholic fermentation is carefully controlled at temperatures ranging from 18 to 20°C. The wine then benefits from careful ageing on its fine lees for a period of 12 months, a method that lends it complexity and a delicate texture without masking its natural straightforwardness.
