Description
Characteristics and Tasting Tips for El Dorado Single Still Enmore 2009
Tasting
Appearance
A golden to amber hue with lovely clarity and brilliance. In the glass, the spirit forms generous legs that reveal its relatively oily texture.
Nose
The aromatic bouquet is alluring and indulgent. It opens with dominant notes of butterscotch and apple, harmoniously complemented by delicate hints of toasted coconut. Deeper nuances of aromatic wood, vanilla and cocoa emerge as it breathes.
Palate
The attack offers a remarkable texture, both velvety and oily. The palate unfolds sweet flavours of cooked peach and coconut, supported by an elegant structure. The finish is long, full and warming, marked by elegant smoky cedar wood and lingering notes of dried fruit.
Pairings and Tasting Occasions
This sipping spirit is best enjoyed neat, or with a dash of water, as an after-dinner digestif. It pairs beautifully with aged hard cheeses, such as an old Gouda served with fig jam, or with intense desserts such as a dark chocolate tart with fleur de sel, or pastries made with dried fruit and caramel.
Mixology
Although it is first and foremost crafted to be enjoyed neat, its aromatic complexity lends itself to occasional, experimental use in spirit-forward cocktails. It excels in sophisticated creations, for example paired with an Italian amaro, demerara syrup and bitters, where the rum remains the star of the recipe.
A Remarkably Rich Guyanese Rum from a Historic Still
El Dorado: The Heritage and Excellence of Guyanese Rum
Launched in 1992, the El Dorado brand embodies the excellence of rum from the Demerara region of Guyana. It is owned by Demerara Distillers Limited (DDL), a Guyanese public company whose board of directors is headed by Chairman Komal R. Samaroo. Heir to a long distilling tradition dating back to the 17th century, DDL gradually brought together all of the historic equipment from the country's former plantations at its sole Diamond complex, located near Georgetown. This exceptional site is home to wooden stills that are unique in the world, true treasures of industrial heritage. Crafted to strict standards, El Dorado rums stand out for their fully tropical ageing and their absolute adherence to international regulations on age statements, ensuring authentic, dense spirits deeply rooted in their terroir.
Single Still Enmore 2009: The Pure Expression of the Last Wooden Continuous Still
Single Still Enmore 2009 is a fascinating release that showcases Guyana's unique distilling heritage. This molasses-based rum comes exclusively from the famous Enmore Wooden Continuous Coffey Still (identified by the EHP mark). Built in 1880 on the plantation of the same name and based on the original design by Irish inventor Aeneas Coffey, it is today the last wooden continuous still in operation anywhere in the world.
The philosophy behind the Single Still range is to offer a pure, unblended expression of a single piece of production equipment. As such, this 2009 vintage was distilled without the addition of any other distillates, allowing enthusiasts to capture the singular aromatic signature of this historic wooden column.
After distillation, Single Still Enmore was aged for 12 years in ex-bourbon American oak casks. This maturation took place entirely in the tropical climate of the Demerara region, encouraging rapid extraction of wood compounds and an exceptional concentration of aromas. The result is a spirit of great authenticity, a liquid testament to expertise carefully preserved by the Diamond Distillery.
