Description
A fruity and harmonious Prosecco Spumante from Veneto
The estate
Throughout each vintage, Villa Sandi has beamed beyond borders as one of the largest producers of Italian wines. Located at the heart of the magnificent region of Prosecco in Veneto, this family estate, on a perpetual quest for excellence, overlooks an exceptional vineyard from which floral and fruity Prosecco grapes originate, as well as the famous Il Fresco.
The vineyard
Il Fresco Biologico by Villa Sandi is produced from a vineyard that is exclusively operated through Organic Farming. This terroir stands out through the presence of alluvium.
Winemaking and ageing
The grapes are subject to light pressing, giving a must which, after an initial racking, is placed in thermoregulated vats until it is used to produce sparkling wines. Vinification is carried out with the help of yeasts selected by Villa Sandi. Carried out at 15-16°C, alcoholic fermentation is interrupted by refrigeration once the required alcohol and sugar levels are reached. A short settling precedes bottling, during which the second fermentation is carried out to preserve floral and fruity aromas.
Blend
Produced in the Prosecco Spumante appellation, the Il Fresco Biologico cuvée by Villa Sandi is produced from a blend of 85% Glera and 15% Chardonnay / Pinot Noir.
Tasting
Colour
The wine is a beautiful, very light straw yellow. The effervescence is fine and persistent.
Nose
The nose mixes delicious fruity (ripe golden fruit) and floral (small mountain flowers) aromas.
Palate
The palate seduces with its softness, its delicious texture as well as its fruity and harmonious finish.
Food and wine pairings
Ideal as an aperitif, the Il Fresco Biologico cuvée by Villa Sandi goes perfectly with shellfish or fried fish.
Serving
For an optimal tasting, serve between 6 and 8°C.
