Colour
This Chablis Village 2023 displays a pale yellow hue with green highlights, characteristic of young Chablis aged in tank.
Nose
The nose captivates with its great purity of fruit, revealing notes of lime and pink grapefruit, supported by floral touches that bring freshness and energy. A clear mineral line runs through the entire bouquet.
Palate
The palate is precise, clean and lively, with a light to medium body carried by a distinct mineral tension. The lime and grapefruit flavours extend crisply into a fresh, persistent finish marked by lemony notes.
Food and Wine Pairing
This Chablis Village 2023 is an ideal match for oysters, shellfish and other seafood, whose freshness and salinity it highlights. It also pairs beautifully with delicately textured fish prepared simply, as well as with fresh or lightly aged goat's cheeses. Its structure also lends itself to pairings with white meats in creamy mushroom sauces.

A Chablis true to the typical minerality of its appellation
The Estate
Founded in 1815 in Chablis, in Burgundy, Domaine Billaud-Simon is now owned by the Faiveley family, the renowned Nuits-Saint-Georges house that acquired it in 2014. Technically directed by Olivier Bailly, the estate retains its own identity and historic expertise, focused on expressing the minerality of its Kimmeridgian terroirs. True to a precise, straightforward and mineral style, Billaud-Simon has been farming its entire vineyard organically since the 2023 vintage.
The Vineyard
The vines from which this Chablis Village 2023 originates are located around the village of Chablis, on both banks of the Serein, within a radius of approximately two kilometres. They are planted on marl and Kimmeridgian limestone soils, the emblematic geological formation of the appellation, which gives the wines their characteristic minerality. The vineyard has been farmed organically since this vintage, with official certification expected from 2025.
The Vintage
The 2023 year saw a mild winter followed by a very dry February, then a late cold snap in March that had no impact on the vines. After alternating cool and mild spells in April that delayed budbreak, rising temperatures from May onwards accelerated the vegetative cycle, leading to rapid flowering in early June. A cool, stormy July was offset by a warm, sunny August, promoting good ripening of the grapes. The harvest took place in good weather conditions, yielding balanced, refined wines.
Vinification and Ageing
The Chablis Village 2023 is vinified entirely in stainless steel tanks at controlled temperature, in order to preserve the purity of the fruit and aromatic freshness. Ageing, also carried out in stainless steel, preserves the wine's mineral tension and precision without any oak influence.
