Description
Characteristics and tasting notes of the Vermentino 2025 from Castello di Volpaia
Tasting
Appearance
The wine reveals a straw-yellow hue, subtly illuminated by greenish reflections.
Nose
The aromatic bouquet opens with delicate floral notes intertwined with scents of citrus, pineapple and orchard fruits. The whole is enhanced by a beautiful minerality and a discreet marine influence.
Palate
On the palate, the wine proves particularly fresh, elegant and perfectly balanced. It is supported by a lively acidity that draws the tasting towards a long, fruity and saline finish.
Food and wine pairings
This white wine pairs ideally with seafood, such as grilled or pan-fried fish, shellfish and crustaceans. It also wonderfully accompanies Mediterranean vegetables, as well as soft cheeses or young pecorinos.

The estate
The modern history of the estate began in 1966 when Raffaello Stianti acquired the property located in Radda in Chianti, in Tuscany. Today, the Castello di Volpaia estate is run by the Mascheroni Stianti family, led by Giovannella and her children Federica and Nicolò. This estate of around 360 hectares is uniquely integrated within a medieval village. It stands out for its complete commitment to organic farming and its ability to precisely showcase both its historic high-altitude terroirs and its coastal plots.
The vineyard
The vines dedicated to this cuvée flourish in the Maremma Toscana region, on a hillside overlooking the former dried-up Lake Prile, a few kilometres from the coast. This maritime terroir benefits from soils rich in alluvium and ancient marine sediments. The vineyard, pruned in Guyot style and cultivated organically, is characterised by a high planting density reaching 9,600 vines per hectare.
Vinification and ageing
In order to preserve all the freshness and aromatic purity of the Vermentino 2025, fermentation is carried out entirely in stainless steel tanks. The wine subsequently benefits from ageing on lees for a period of six months.
