Since its founding in 1818 by Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving its expertise and the pursuit of quality in its cuvées for 7 generations.
The Vineyard
The Billecart-Salmon estate's vineyard stretches from the Côte des Blancs to the Montagne de Reims, covering nearly 100 hectares. The vines are cultivated and tended using traditional methods to achieve authentic fruit and reflect the quality of its Champagne terroir.

Precise, innovative, and bold, these “Rendez-Vous” cuvées are born from the desire to highlight an exceptional terroir and a Champagne grape variety, combined with meticulous and demanding winemaking expertise.

Les Rendez-Vous de Billecart-Salmon N°4
The Cuvée
This champagne is crafted exclusively from grands crus of Mesnil-sur-Oger (Côte des Blancs).
Winemaking and Aging
Vinification takes place in vats, preserving all the finesse of the varietal. The wine is then aged on lees in the cellar for 70 months, enhancing its character and depth. Dosage is 3.9 g/L.

Characteristics and Tasting Notes for Les Rendez-Vous de Billecart-Salmon N°4 and Numero Cinq
Tasting
On the nose, this wine reveals floral aromas of jasmine, accompanied by hints of fresh pineapple and brioche. On the palate, there is a vibrant tension, complemented by chalky nuances and flavors of Menton lemon and blood orange. A saline finish emerges, unveiling delicate notes of bergamot.

This Champagne Blanc de Blancs should be served between 10 and 12°C.

The Cuvée
This cuvée is crafted from terroirs located in the villages of Verzenay, Ambonnay, Aÿ, Mareuil-sur-Aÿ, and Verzy (Montagne de Reims).
Winemaking and Aging
This wine has been carefully vinified in vats, ensuring the preservation of its aromas. Its maturation on lees in the cellar lasted 70 months, providing remarkable texture and complexity. Dosage is 1 g/L.

Tasting
On the nose, this wine reveals floral notes of linden and verbena, enhanced by mandarin. On the palate, it shows elegant breadth with nuances of limoncello, almonds, and blond tobacco, evolving towards aromas of cherry, blueberry, apricot, and fresh figs.

This Champagne Blanc de Noirs should be served between 10 and 12°C.
