Tasting Notes
Colour
The wine displays a bright, brilliant ruby red colour.
Nose
Highly expressive, the aromatic bouquet reveals notes of small red and black fruits, such as cherry, raspberry and blackcurrant. These are underscored by delicate touches of vanilla, sweet spices and undergrowth, along with subtle floral nuances over a finely oaked background.
Palate
The attack is fresh, supple and round. The palate offers lovely acidity that balances the fruity flavours, supported by fine, silky tannins that remain slightly firm in their youth. The finish is lively, mouth-watering and harmoniously tangy.
Food and Wine Pairing
This red wine pairs beautifully with roasted white or red meats, poultry, as well as vegetarian dishes based on mushrooms or grilled vegetables. It also goes very well with lightly matured soft cheeses or fish served with a delicate sauce.
Serving and Cellaring
The Bourgogne Pinot Noir "Cuvée Edme" 2024 can be enjoyed now, after a light one-hour decanting, or cellared until around 2030. For optimal tasting, it is recommended to serve it at a temperature between 14 and 16 °C.
The Precision and Freshness of a Red Burgundy Wine
The Estate
Founded in 1720 in Beaune, the House of Champy is the oldest négociant-éleveur house in Burgundy. Now owned by the AdVini group, it is run by winemaker Dimitri Bazas. The estate oversees a 21-hectare vineyard located on the Côte de Beaune, largely farmed organically and certified High Environmental Value. As the last intramural production site in the heart of Beaune, the house stands out for its exceptional historical heritage and its commitment to precision viticulture that respects its environment.
The Vineyard
The grapes for this cuvée come from a rigorous selection of plots spread across the departments of Yonne, Côte-d'Or and Saône-et-Loire, at the heart of the Bourgogne region. The vines thrive on typical terroirs with clay-limestone soils, particularly well suited to bringing out the quality expression of the grape variety.
Winemaking and Ageing
Following hand-harvesting, the Bourgogne Pinot Noir "Cuvée Edme" 2024 is vinified using traditional methods. Fermentation takes place in temperature-controlled stainless steel tanks using indigenous yeasts, followed by complete malolactic fermentation. The wine is then aged for twelve months in oak barrels, around 20% of which are new, in order to preserve the purity of the fruit while providing an elegant structure.
