Tasting

Appearance
The wine displays a deep and intense ruby red color.

Nose
The bouquet reveals aromas of marasca cherries and peony, accompanied by subtle notes of sandalwood and juniper. Hints of black pepper, licorice, and rhubarb further enrich the aromatic palette.

Palate
On the palate, this wine captivates with its remarkable balance and refined tannins. The structure is harmonious with an elegant finish and a clean, pure mouthfeel.

Food and Wine Pairings

This sangiovese pairs perfectly with Tuscan meat-based recipes, crostini, and aged cheeses. It also goes very well with charcuterie and game, notably hare, wild boar, Chianina beef, and Cinta Senese pork.

A delicate and expressive Tuscan sangiovese

The estate

Founded in 1993 by Ferruccio Ferragamo, Il Borro transformed a 12th-century medieval hamlet into an exceptional wine estate in Tuscany. Spanning 1,100 hectares in the Valdarno, the property began developing its vineyards in 1995 to release its first vintage in 2003. Under the direction of Ferruccio Ferragamo, the estate now produces 12 cuvées, 10 of which are organic, combining sustainable agriculture with historical heritage.

The vineyard

The Polissena vines flourish on schist soils offering exceptional drainage, a hallmark of the Valdarno di Sopra DOC terroir in Tuscany. This unique geological nature gives the wine its distinctive personality and mineral structure.

The vintage

The year 2020 was marked by a dry and warm winter and spring, followed by heavy rainfall between May and June. The particularly hot summer was interrupted by storms in early September, leading to an early harvest. Despite these contrasting weather conditions, the quality of the harvested grapes proved excellent.

Vinification and aging

Manual harvesting. Fermentation takes place in stainless steel tanks, followed by 18 months of aging in French oak barrels, one third of which are new, and in French oak vats. The process ends with a 6-month refinement in steel tanks.
