The estate
Founded in 1923 following the initiative of Abbé Balitrand, the cooperative cellar La Chablisienne is the most important producer of Chablis wines. From Petit Chablis, to Chablis, Chablis Premiers Crus and Chablis Grands Crus, and the wines from the legendary Château Grenouille, La Chablisienne produces around thirty different vintages and crus which enable lovers of great Burgundy wines to discover the multiple profiles of Chablis wines.
The vineyard
The 2019 "Les Vénérables" wine by La Chablisienne is a Chablis wine made from vineyards that spread over all the communes of the appellation. These old vines are 50 years old on average and are planted on Kimmeridgian clay-limestone soils.
Vinification and ageing
Cold static settling. Alcoholic and malolactic fermentations are carried out in vats. This Chablis Village is aged for about 12 months on fine lees, in vats and barrels.

The tasting
Colour
The colour is bright and showcases a beautiful white gold hue.
Nose
The concentrated and delicate nose elegantly reveals buttery and vanilla fragrances resulting from the oak-ageing, as well as delicious notes of white fruit (peach).
Palate
A fresh and precise attack is followed by a seductively complex palate. Ripe fruit, brioche, vanilla...all these aromas blend harmoniously with a smooth minerality.
Food and wine pairing
Scallops a la plancha or cheeses (goat's cheese, truffled Brie, Beaufort....) will complement this fine white Burgundy wine.
