Tasting
Colour
Bright and limpid, the colour reveals a pale gold hue enhanced by delicate silvery or golden highlights.
Nose
Initially discreet, with woody notes and toasted hazelnut, the nose opens up after aeration to reveal aromas of white-fleshed fruits such as pear and peach, citrus, and lemon balm. The whole is underscored by a typical minerality reminiscent of flint and gunflint.
Palate
Balanced and marked by a lovely acidic tension, the palate offers a creamy, silky texture. The rich, fruity mid-palate stretches into a dry, persistent, and deeply mineral finish, highlighted by a saline touch and notes of toasted dried fruit.
Food and Wine Pairing
This white wine from France pairs wonderfully with seafood and shellfish, such as oysters or scallops with lobster sauce. It also elegantly accompanies delicate white fish, like a fillet of sea bass with tarragon, as well as matured cheeses such as Chaource, Beaufort, or a semi-dry goat cheese.
Service and Storage

The Estate
Founded in 1923 by Abbé Balitrand to address economic challenges, La Chablisienne is an essential institution in Burgundy. Bringing together more than 300 winegrowers, the cooperative farms nearly a quarter of the appellation's vineyards. Now led by Damien Leclerc, it has stood out since the 1950s for exclusively receiving musts, allowing full control over the winemaking process. Renowned worldwide for its excellence, La Chablisienne crafts cuvées that precisely reflect the purity and complexity of the region's limestone terroirs.
The Vineyard
Located on the left bank of the Serein, the climat Les Lys benefits from a distinctive north-east exposure within the Chablis appellation. This microclimate, sheltered from excessive heat and well-ventilated, encourages slow berry ripening. The vines, averaging 25 years old and planted at a density of 5,500 to 6,500 vines per hectare, thrive on a soil of sticky clay resting on Kimmeridgian subsoil. This ancient geology, rich in marl and marine fossils, gives the wine its unique mineral signature.
The Vintage
The year 2022 was marked by particularly mild weather conditions, offering an ideal balance between freshness and berry ripeness. The warm summer allowed for optimal ripening, while the plot's north-east exposure preserved the grapes' natural acidity, resulting in a healthy, high-quality harvest.
Winemaking and Ageing
As soon as pressing takes place, the unfermented musts are received by the cooperative for rigorous oversight of the winemaking of this Chablis 1er Cru "Les Lys" 2022. The alcoholic and malolactic fermentations are carefully monitored. The wine is then aged for an extended period, partly in oak barrels, to incorporate subtle woody notes while respecting the terroir's identity before bottling.
