The estate
Founded in 1923 under the initiative of Abbé Balitrand, La Chablisienne is today the leading cooperative cellar in Chablis, both in terms of size and wine quality. It offers a wide range covering the entire appellation, from Petit Chablis to Grands Crus, including Premiers Crus and the emblematic cuvées of Château Grenouille. This diversity showcases all facets of the Chablis terroir across around thirty distinct cuvées.
The vineyard
This Chablis 1er Cru "Mont de Milieu" comes from vines planted on the left bank of the Serein. Around 25 years old, they root in typical Kimméridgien clay-limestone soils and benefit from a south-facing exposure, conducive to optimal ripeness of the grapes, resulting in an essential vin de Bourgogne.
Winemaking and aging
After static cold settling, fermentation takes place in tanks and barrels, for both the alcoholic and malolactic phases. This Chablis 1er Cru is then aged for 12 months on fine lees, in tanks and barrels, to enrich its structure while preserving its aromatic precision.
