Tasting
Colour
The colour is a pale gold hue, clear and bright, enhanced by delicate golden highlights.
Nose
The bouquet is initially discreet, revealing aromas of white-fleshed fruits such as pear and peach. After aeration, the nose gains in expressiveness and fruity intensity, revealing light oaky notes reminiscent of coconut.
Palate
The palate is full and perfectly balanced, underpinned by a lovely structure. The oak comes through on the finish, bringing warmth and a beautiful length. Light saline notes round out this elegant, mineral Premier Cru.
Food and Wine Pairing
This Chablis Premier Cru pairs beautifully with pan-seared scallops, spiced roast chicken with a sweet-and-savoury edge, or a cheese board featuring semi-dry goat cheese, Chaource and Beaufort.
An Elegant, Mineral Chablis Premier Cru by La Chablisienne
The Estate
Founded in 1923 at the initiative of Abbé Balitrand, La Chablisienne has established itself as the leading producer of Chablis in Burgundy. This wine cooperative today brings together nearly 300 winegrowers cultivating around 1,200 hectares, representing 23% of the Chablis vineyard area. The estate is notably distinguished by its ownership of Château Grenouilles, a unique Grand Cru monopole, acquired in 2003. Offering close to 30 cuvées across the full range of Chablis appellations, La Chablisienne combines rigorous technical expertise with demanding parcel selection, which earned it the RVF award for Cooperative Winery of the Year in 2014.
The Vineyard
The Chablis Premier Cru "Les Lys" comes from plots located on the left bank of the Serein, in the commune of Chablis, adjoining the Chablis Premier Cru Vaillons. The vines, with an average age of 25 years, benefit from a north-east exposure and are planted at a density of between 5,500 and 6,500 vines per hectare. The terroir rests on Kimmeridgian clay-limestone soils, characteristic of the appellation.
Winemaking and Aging
Winemaking for the Chablis Premier Cru "Les Lys" 2020 begins with a static cold settling process before fermentation. Alcoholic and malolactic fermentation take place in both tank and barrel. The wine is then aged for around 12 months on fine lees, split between tanks and barrels.
