Tasting

Appearance
The wine reveals a delicate pale hue, enhanced by subtle green highlights typical of its youth.

Nose
The aromatic bouquet opens with beautiful floral complexity and scents of white-fleshed fruits such as pear, accompanied by citrus notes. A fine mineral thread blends with light hints of anise.

Palate
On the palate, this dry white wine offers remarkable purity, combining perfectly integrated liveliness with luscious roundness. The balance is underlined by a mineral tension evoking warm stone, notes of white flowers and a smooth flesh. The finish reveals a delicate woody persistence.

Food and wine pairings

This white wine pairs wonderfully with poultry in cream sauce, grilled firm-fleshed fish such as roasted turbot, or shellfish such as lobster and spiny lobster. It also goes very well with aged hard cheeses such as a mature Gruyère, as well as mushroom risottos.

Serving and cellaring

For optimal tasting of the Chassagne-Montrachet 1er Cru "Les Chaumées" 2023, it is advisable to decant it 30 to 45 minutes before serving, at an ideal temperature between 12 and 13°C. With excellent potential, this wine can be cellared and will evolve beautifully until around 2032.

The estate

Founded in the late 2000s by the Picard family, the Au Pied du Mont Chauve estate embodies the renewal of viticulture in Burgundy. Led by Francine Picard, this property covers approximately 35 hectares of vineyards spread across prestigious terroirs. Driven by an environmentally respectful philosophy, the director has intensified biodynamic practices to enhance the quality of the soils. The estate stands out for its meticulous plot-by-plot approach, conceived as a true haute couture selection, in order to produce wines that faithfully reflect the richness of their terroirs.

The vineyard

This Chassagne-Montrachet 1er Cru Les Chaumées comes from vines with an average age of 40 years, planted mid-slope on a brown soil rich in white limestone. This very steep viticultural area is almost devoid of topsoil, causing water stress during periods of intense heat.

The vintage

The 2023 vintage stands out for high annual temperatures, mainly due to a particularly mild winter rather than extreme summer heat. Thanks to sufficient water reserves at the beginning of the growing cycle, the vines were able to develop serenely, allowing the grapes to retain a lovely natural freshness despite a generally warm climatic context.

Winemaking and aging

Manual harvesting with sorting, followed by pneumatic pressing. The juices are transferred to stainless steel tanks for overnight settling. They are then racked into barrels for alcoholic fermentation. 18 months of aging on the lees with 30% new wood (50% in Burgundian barrels and 50% in 350L barrels of two wines or more).
