Tasting
Color
In the glass, this wine reveals a beautiful straw-yellow hue with subtle golden highlights. It stands out for its remarkably fine bubbles, forming a delicate and persistent mousse.
Nose
Wonderfully generous, the aromatic bouquet opens with luscious notes of ripe peach, lychee and delicate acacia blossom. Subtle herbal touches reminiscent of sage intertwine with yellow-fleshed fruit aromas such as apricot, all carried by a lovely olfactory lightness.
Palate
The palate offers a delicate texture where fruity richness is perfectly balanced by a wonderful natural freshness. The fine effervescence brings an airy, revitalizing tactile sensation, leading into an elegant and harmonious finish.
Food and wine pairing
This sparkling wine pairs beautifully with desserts such as dry pastries, fruit tarts or traditional panettone. It also pairs surprisingly well with blue cheeses or fresh goat cheese, as well as fresh fruit. For a bolder pairing, it will elevate delicate shellfish such as lobster or crab.
Other characteristics
This sparkling wine has a low alcohol content of 5.5% vol. Its natural sweetness translates into a residual sugar content of between 80 and 150 g/l, while maintaining a moderate calorie profile.
The authentic expression of a Moscato d'Asti from Piedmont
The estate
Founded in 1937 by Riccardo Ceretto, the Ceretto house is an emblematic figure of Piedmont. Now led by Federico Ceretto, this family estate stands out for its visionary approach combining precision viticulture, art and fine dining. In 1976, the family joined forces with other winegrowers to create the I Vignaioli di Santo Stefano cooperative, dedicated to excellence in moscato. Driven by a deep environmental commitment, the estate is certified organic and enjoys worldwide renown, ranking among the world's finest vineyards while preserving a strong artisanal identity.
The vineyard
Dedicated to the production of this Moscato d'Asti, the vineyard spans approximately 37 hectares across the communes of Santo Stefano Belbo, Calosso and Canelli. Rising to over 300 meters in altitude, the vines thrive on soils rich in marl and limestone. Farmed according to organic principles with certification obtained in 2017, the estate promotes biodiversity and the use of green manure. A strict policy of reduced yields and rigorous grape selection ensures optimal aromatic concentration.
Winemaking and aging
For the I Vignaioli di S. Stefano 2025 vintage, fermentation is deliberately halted at an early stage to preserve the natural sweetness of the berries and limit the alcohol content. Aging then takes place exclusively in steel autoclaves for a few months, allowing for slight micro-oxidation that stabilizes the wine while retaining its primary aromatic brightness. Mindful of its environmental impact, the estate is innovating for this vintage with a lighter bottle and the adoption of a screw cap, ensuring optimal preservation.
