Tasting notes
Colour
The colour reveals a pale golden yellow hue with straw highlights, of remarkable clarity.
Nose
The nose opens with delicate aromas of white flowers, such as elderflower and hawthorn, mingled with orchard fruit notes like white peach and pear. With aeration, a deep minerality emerges, accompanied by subtle touches of green almond and a hint of menthol.
Palate
On the palate, the attack is lively and wonderfully fresh. The texture is rounded and rich, offering a lovely balance. Stone fruit and floral flavours reappear, underpinned by a mineral and saline backbone that stretches into a beautifully persistent finish.
Food and wine pairing
This white wine pairs beautifully with seafood, oysters, or delicate fish such as sea bass fillet. It also goes wonderfully well with white meats and poultry served with a light cream sauce, or can be enjoyed on its own as an aperitif.
Service and storage
To fully appreciate the Savigny-Les-Beaune Village "Les Saucours" 2022, it is recommended to serve it at a temperature between 12 and 13°C. This wine can be enjoyed now and will continue to evolve until around 2034.

The estate
Founded in 1834 and historically linked to a renowned champagne house, the Chandon de Briailles estate is located in Burgundy, France. Now managed by Claude and François de Nicolay, this property spans over 13 hectares. A pioneer in environmental practices, the estate adopted biodynamic farming, earning Demeter certification in 2011. Rooted in values of respect for living organisms and minimal intervention, the vineyard stands out for its soil work carried out exclusively by draft horses, resulting in wines of exceptional purity.
The vineyard
The "Les Saucours" cuvée comes from a small 0.6-hectare plot acquired in 2008 and planted in 2014, located in the commune of Savigny-Les-Beaune. Facing east on a mid-slope, the Chardonnay vines thrive on a distinctive terroir composed of white marl, limestone, and clay-limestone elements. This cool, well-drained soil encourages deep rooting and gives the wine its distinctive mineral signature.
The vintage
2022 was marked by generous, sunny weather. Spring and summer saw particularly hot and dry conditions. Thanks to the favourable exposure of the vines and meticulous soil management, the vines were able to withstand these climatic challenges. The harvest, which took place from August 25 to September 10, yielded grapes in excellent health, requiring very little sorting.
Winemaking and aging
The grapes destined for the Savigny-Les-Beaune Village "Les Saucours" 2022 are hand-harvested, then gently pressed using a traditional vertical press. After settling for one to two nights, the must is transferred by gravity into ten-hectolitre wooden foudres. Fermentation takes place slowly at low temperatures using indigenous yeasts. The wine then undergoes extended aging on fine lees for 20 to 30 months. Bottling is carried out without fining or filtration, using an inert gas to preserve the wine's full integrity.
