Tasting Notes
Appearance
This wine reveals a deep red hue, oscillating between bright ruby and intense purple, enhanced by a beautiful brilliance.
Nose
The aromatic bouquet opens with intense notes of fresh black fruits such as blackberry and black cherry. It is then enriched with spicy nuances, hints of liquorice and subtle smoky aromas, all underpinned by a lovely minerality.
Palate
Both powerful and unctuous, the palate offers a slightly creamy texture carried by lively acidity and fine tannins. The whole reveals an elegant structure and a refreshing minerality, extending into a long finish marked by spice and fruit.
Food and Wine Pairing
This red wine pairs wonderfully with slow-cooked meats such as beef bourguignon, grilled duck breast or roast rack of lamb with herbs. It will also pair very well with poultry in sauce as well as characterful, well-aged cheeses such as Époisses or Comté.
Serving and Cellaring
To fully enjoy this wine, it is recommended to serve it at a temperature between 16 and 18°C. Blessed with excellent ageing potential, it deserves a few years in the cellar to reveal its full complexity and can be kept until around 2039.

The Estate
Founded in 1984 by Didier Montchovet in Nantoux, the estate established itself as a pioneer of biodynamics in Burgundy. Now at the helm of the property, winemaker Boris Champy took over this dozen-hectare estate in the late 2010s. Domaine Boris Champy stands out for its deep commitment to biodiversity and agroecology. By making the most of microclimates and high-altitude terroirs, the current owner aims to raise the wines of the Hautes-Côtes to the level of the region's most prestigious appellations.
The Vineyard
The cuvée comes from the "Au Clou" plot, located in Nantoux in the Hautes-Côtes de Beaune in Burgundy. This distinctive vineyard sits at an altitude of 377 metres and rests on very stony soils rich in limestone marl. The vines, trained using low Guyot pruning with a high planting density, thrive within a truly preserved ecosystem. Biodynamic viticulture fosters biodiversity here through the maintenance of hedgerows, the use of green manures and minimal soil work.
Winemaking and Ageing
Winemaking is kept as non-interventionist as possible. Following manual harvesting at optimal ripeness, fermentation begins with indigenous yeasts. The process involves a large proportion of whole-cluster fruit, ranging from 80 to 100%, with gentle extraction and limited punching down. Ageing then takes place over a period of about twelve months in oak barrels, mostly once-used, in order to preserve the brightness of the fruit and the identity of the terroir.
