Colour
Beautifully clear, the wine reveals a deep ruby hue enhanced by deep purple glints.
Nose
Rich and generous, the bouquet opens with aromas of fresh red fruit and blackcurrant buds, intertwined with mineral and smoky touches. With aeration, delicate floral notes of violet and spicy nuances of pepper and clove emerge.
Palate
A full and structured attack precedes an elegant mid-palate, supported by fine, silky tannins. The balance is perfect, leading to a lively, lingering finish.
Food and Wine Pairing
This Givry pairs wonderfully with red meats in sauce, such as beef bourguignon, or a grilled rib-eye steak. It also perfectly complements poultry dishes such as duck breast with cherries, feathered game, as well as soft cheeses like reblochon or brie.
Service and Storage
To fully appreciate the Givry Village "Clos des Mortières" 2023, it is recommended to serve it at a temperature between 15 and 16°C, taking care to open it about an hour before tasting. This wine can be enjoyed from 2025 and will continue to develop favourably until around 2033.

The Authentic and Historic Expression of a Great Burgundy Wine
The Estate
The history of Domaine de la Ferté dates back to 1113, with the founding of the eponymous Cistercian abbey in Burgundy. The monks meticulously developed viticulture there over the centuries. Acquired in 1995 by the Devillard family, this 6-hectare estate is now run by Amaury Devillard. Certified High Environmental Value, the estate carries on a thousand-year-old heritage, combining respect for tradition with technical precision, establishing itself as an essential reference in the region.
The Vineyard
Located within the Givry appellation, the Clos de Mortières plot is a 1.71-hectare monopoly. The vines, around 30 years old, benefit from an east-southeast and south-southeast exposure, at an altitude ranging from 240 to 280 metres. The terroir stands out for its great soil diversity, combining clay-limestone soils on the upper part and sandy soils on the lower part. The vineyard is managed according to the principles of sustainable farming.
The Vintage
The year 2023 was marked by rather cool weather conditions. This particular climate favoured the formation of small berries, resulting in a higher skin-to-juice ratio, ideal for optimal concentration of aromas and colour.
Winemaking and Aging
The grapes for the Givry Village "Clos des Mortières" 2023 are harvested exclusively by hand, followed by rigorous sorting. Maceration lasts 16 to 18 days in open vats with twice-daily punching down and the use of indigenous yeasts. Malolactic fermentation is carried out 100%. The wine is then aged for 10 months in French oak barrels (20% new oak), before resting in stainless steel tanks. The wine is lightly filtered without prior fining.
