Tasting

Colour
The colour reveals a clear ruby red hue, enhanced by a particularly brilliant rim.

Nose
The bouquet opens with intense aromas of ripe red fruits, such as raspberry and black cherry, accompanied by floral notes. As the tasting progresses, the ensemble is enriched with touches of violet, white pepper and subtle woody nuances.

Palate
The attack is lively and direct, introducing a fleshy, silky texture. The structure rests on tannins of great finesse. The finish, remarkably long, extends the pleasure with flavours of wild strawberry, black cherry and undergrowth, enhanced by a mineral and saline edge.

Food and Wine Pairing

This red wine pairs perfectly with full-flavoured meats such as beef bourguignon, roasted game or duck breast with red fruits. It also goes wonderfully with beef tartare, roasted poultry, and well-aged hard cheeses.

Service and Storage

For optimal enjoyment of the Beaune 1er Cru "Les Cent-Vignes" 2023, it is recommended to serve it at a temperature of between 14 and 16°C, after decanting or aerating in the glass for 15 to 30 minutes. This wine can be enjoyed now, but will continue to develop in the cellar until around 2033.

The Elegance and Precision of a Beaune Premier Cru

The Estate

Founded in the eleventh century, the Domaine du Château de Meursault stands as a true institution in Burgundy, France. Spanning 65 hectares divided into 110 plots, this historic estate has undergone a major revival since its acquisition by the Halley family in 2012. Under the leadership of its current owner, Olivier Halley, significant investments have been made to modernise the infrastructure and convert the entire vineyard to organic farming. The Domaine du Château de Meursault today embodies the perfect alliance between centuries-old heritage and precision viticulture.

The Vineyard

Located on the slopes of the Beaune appellation, the Cent-Vignes climat benefits from an ideal east-southeast exposure, perfect for capturing the morning sun. The estate carefully cultivates 2.4 hectares of vines here. This terroir stands out for its clay-limestone soils, particularly stony and sandy, composed of small chailles, which ensure excellent drainage and give the wine its mineral signature. All of these plots are farmed according to the principles of organic agriculture.

The Vintage

The year 2023 proved particularly favourable in the region. Weather conditions in the days leading up to the harvest were marked by strong evaporation, which allowed for optimal concentration of the berries. This natural phenomenon favoured the production of rich juices, with beautiful aromatic intensity and a remarkable structure.

Winemaking and Aging

After manual harvesting, the grapes destined for the Beaune 1er Cru "Les Cent-Vignes" 2023 undergo a double sorting, first manual then optical, before being destemmed. A cold pre-fermentation maceration of 15 to 18 days is carried out, followed by alcoholic fermentation punctuated by measured punching down and pumping over. After gentle pneumatic pressing, the wine is aged for 16 to 18 months in oak barrels, 40% of which are new and 60% one- to two-year-old barrels.
