Tasting
Colour
The colour reveals a pale yellow hue with golden highlights, both clear and brilliant.
Nose
Precise and expressive, the nose reveals aromas of white fruits, such as apple and ripe pear, accompanied by notes of white flowers. The whole is delicately underscored by subtle hints of vanilla and hazelnut.
Palate
The generous, full-bodied attack gives way to a palate offering a lovely balance between roundness and mineral freshness. The finish stands out for its precision and length, with no trace of bitterness.
Food and wine pairing
This white wine pairs perfectly with poultry or veal in cream sauce, as well as with river fish such as trout or pikeperch. It also goes very well with hard cheeses or light Asian dishes with seafood.
Service and storage
To fully appreciate this Beaune 1er cru "Tuvilains" 2023, it is recommended to serve it at a temperature between 12 and 15°C. This wine can develop favourably in the cellar until around 2038.
The mineral and floral expression of a white Beaune Premier Cru
The estate
The history of the Domaine du Château de Meursault began in the eleventh century, making it one of the oldest winemaking institutions in Burgundy. Located in the Côte de Beaune, the estate spans 67 hectares. Acquired in 2012 by Olivier Halley, the estate has since undergone a genuine revival. Under the guidance of the Halley family, the estate has moved toward sustainable practices, achieving organic certification in 2022. The estate stands out for its mastery of a wide diversity of terroirs, producing wines renowned for their precision and faithfulness to their origins.
The vineyard
The "Tuvilains" climat is located in the southern part of the Beaune Premier Cru appellation, at the foot of the slope. East-facing, the vines benefit from optimal morning sunlight. The terroir rests on soils made up of light clay, limestone, and gravel, providing ideal drainage for grape growing.
Winemaking and aging
After a rigorous manual sorting, pressing, and settling, alcoholic fermentation takes place in oak barrels. Aging continues on the lees for 15 months, with regular lees stirring during the first half of this period. The wine rests in oak barrels, 30% of which are new, to bring subtle complexity without masking the brightness of the fruit.
