Tasting

Appearance
The wine reveals a pale golden hue, both clear and bright.

Nose
Bright and enticing, the nose releases aromas of green apple and pear, harmoniously blended with floral notes of orange blossom and citrus. Delicate hints of lemon zest and a very subtle oaky touch complete this vibrant bouquet.

Palate
Precise and luminous, the palate charms with its supple, satiny texture. It reveals a lovely core of white fruits underpinned by a racy acidity, extending towards a full and deeply mineral finish.

Food and wine pairings

This white wine pairs beautifully with a blanquette de veau, pike in cream sauce or goat cheese gougères. It will also go very well with poultry in sauce, delicate white fish and pressed cheeses such as a young Comté.

Serving and cellaring

To fully appreciate the Pouilly-Fuissé "Village" 2023, it is recommended to serve it between 10 and 12°C, opening the bottle half an hour before tasting. This wine will reveal its aromas straight away and can be cellared until around 2030.

The precision and mineral freshness of a white wine from Pouilly-Fuissé

The estate

Located at the heart of the village of Pouilly, at the foot of the famous Roche de Solutré in Burgundy (France), the Domaine du Roc des Boutires was created in its current form in 2016 when it was taken over by the Parinet family. Also owners of Château du Moulin-à-Vent, the family instils a highly demanding plot-by-plot approach to winemaking. The estate covers a confidential surface area of approximately 4.8 hectares in total. Drawing on an old vineyard planted in the 1970s, it stands today as an essential signature of the Mâconnais.

The vineyard

The grapes for this Pouilly-Fuissé come from four distinct plots: "A la roue", "Barvay", "Aux Combes" and "En Bertilionne". These vines, aged between 40 and 45 years, flourish on a geological mosaic ranging from deep clays to hard limestones, including silty-clay and marl-limestone soils. The harvest is carried out by hand in small crates to preserve the integrity of the berries.

The vintage

The year 2023 was characterised by rather cool climatic conditions in the south of the region. Moderate temperatures and well-distributed rainfall helped avoid severe water stress. This weather encouraged a slow and gradual ripening of the berries, thereby preserving excellent natural acidity.

Winemaking and ageing

Transferred by gravity, the grapes undergo whole-cluster pressing followed by cold static settling. For this Pouilly-Fuissé "Village" 2023, fermentation and ageing on fine lees last around 15 months. Ageing takes place 80% in stainless steel tanks and 20% in French oak barrels, with very rare use of bâtonnage in order to preserve the wine's full tension.
