Tasting

Colour
The colour reveals a beautiful ruby hue, with a depth and intensity characteristic of Pinot Noir harvested at perfect ripeness.

Nose
Wonderfully complex, the nose opens with intense aromas of raspberry and black cherry. It then evolves towards notes of jammy black fruit, red fruit coulis and plum. Floral touches typical of the terroir, such as peony and black tulip, blend harmoniously with subtle nuances of cocoa, dark chocolate and quince.

Palate
The attack offers a lovely freshness, underpinned by a crisp acidity that enhances the fruity expression. The mid-palate reveals a wine of great richness, structured by refined, well-balanced tannins. The finish, persistent and elegant, extends the tasting experience with floral and fruity notes.

Food and wine pairing

This red wine pairs wonderfully with a traditional coq au vin, red meats such as filet mignon or rosemary-crusted lamb chops, as well as duck breast with cherries. It will also enhance vegetarian dishes with mushrooms or a platter of mature cheeses such as Comté, aged Gouda or Brie.

Service and storage

With excellent ageing potential, this Pommard Village 2023 can be cellared to develop favourably until around 2038.

The authentic expression of a Burgundy terroir

The estate

Founded in 1992 by François and Marie-Pierre Mikulski, Domaine François Mikulski is located in Meursault, in Burgundy. With no family winemaking heritage, the estate has forged its own identity by prioritising the pure expression of its terroirs. The vineyard now covers 9 hectares, cultivated according to the principles of uncertified organic farming. The estate is currently run by François Mikulski and his son-in-law Thomas Boccon. Together, they uphold a philosophy centred on quality, preserving soil balance and minimal-intervention winemaking.

The vineyard

The plots dedicated to this cuvée are located within the Pommard appellation, in the Côte de Beaune. With an average age of 25 years, the vines flourish on a subsoil composed of fine fluvial alluvial sediments. This soil structure, containing less limestone, is heavier and particularly well-draining, which has a fundamental influence on the development and character of the wine.

The vintage

2023 required meticulous management of the growing cycle. Conditions called for green harvesting as well as extremely rigorous sorting of the bunches at harvest time to ensure optimal quality.

Winemaking and ageing

For this Pommard Village 2023, the grapes are destemmed then gently pressed using a pneumatic press. Fermentation is triggered by indigenous yeasts and takes place in tanks for around a fortnight. The wine is then aged on the lees for at least 12 months in oak barrels, with the proportion of new wood deliberately limited to 20% to preserve the brightness of the fruit. Fining completes the wine's profile before bottling.
