Tasting
Colour
The colour reveals a deep straw hue, enhanced by brilliant yellow highlights, reflecting its skin maceration.
Nose
The aromatic bouquet blends intense floral notes, such as orange blossom and elderflower, with touches of citrus like citron and lemongrass. Subtle aromas of honey and spice, alongside a mineral backbone, round out this complex whole.
Palate
Completely dry, this skin-contact white wine offers a rich, juicy palate, carried by a lovely refreshing acidity. The finish lingers on mineral and saline notes reminiscent of oyster shell, enhanced by a delicate gastronomic bitterness.
Food and wine pairing
This wine pairs wonderfully with raw or cooked seafood, particularly oysters, crab or ceviche. It also enhances Mediterranean or Asian dishes flavoured with lemongrass, ginger and fresh herbs, as well as delicate dishes such as asparagus or herring fillets.

The estate
Founded by Georges Gauby, Domaine Gauby is located in Calce, in Roussillon, France. Historically transformed by Gérard Gauby from 1985 onwards, the estate was a pioneer in the production of quality dry wines in the region, drawing on a philosophy respectful of living systems, with organic certification achieved in 1996 followed by biodynamic certification in 2001. In March 2024, the estate was sold to two French investors, Yann Mazabraud and François Baulé. Gérard Gauby continues to support this transition in order to preserve the unique identity of this 85-hectare estate, of which 45 hectares are under vine.
The vineyard
This wine, produced under the IGP Côtes Catalanes, comes from a preserved, wild terroir situated at altitudes of up to 300 metres, benefiting from the influences of the Mediterranean Sea and the Pyrenees. The vines, some of which have reached the venerable age of 120 years, thrive on complex soils composed of limestone, marl and schist. The vineyard is managed according to strict biodynamic principles, with no chemical inputs whatsoever, fostering rich biodiversity within a natural environment of scrubland and forest.
Winemaking and aging
La Jasse 2024 is made using the orange wine technique, with whole-bunch skin maceration lasting around three weeks, followed by direct pressing. Fermentation takes place naturally with indigenous yeasts, without chaptalisation, acidification, fining or mechanical filtration. The wine is then aged for seven months in used oak foudres and barrels, allowing its aromatic complexity to develop while preserving the purity of the fruit.
