Tasting
Colour
This red wine reveals a beautifully intense hue, marked by a deep purple tone. The rim shows subtle violet nuances, testifying to the vitality of this wine in its youth.
Nose
Wonderfully pure, the aromatic bouquet opens with notes of ripe and dried cherries, underlined by a touch of liquorice. With aeration, floral aromas of lavender and scents of garrigue mingle with a very distinct mineral and saline imprint, evoking rock and schist.
Palate
The palate seduces with its velvety texture and smoothness. Medium-bodied, it unfolds a core of juicy fruit reminiscent of wild berries and redcurrant, supported by a bright acidity. The tannins, remarkably delicate and particularly silky, accompany a graceful finish where the minerality of the terroir expresses itself with clarity.
Food and wine pairing
The freshness and delicacy of this wine pair wonderfully with Mediterranean dishes. It will beautifully complement grilled white fish such as sole with lemon butter, roasted poultry with herbs, or dishes based on sun-drenched vegetables. When it comes to cheese, well-aged hard cheeses such as an old Comté or a Gruyère will reveal its full complexity.
Service and storage
To fully appreciate Les Calcinaires 2022, it is recommended to serve it at cellar temperature, ideally between 16 and 18°C. While it already offers plenty of pleasure in its youth, this wine has a fine structure allowing it to age favourably in the cellar until around 2034.
Other characteristics
This wine stands out for its moderate alcohol level for its region. To preserve its full sensory complexity, it is bottled without any prior fining or filtration.
The elegance and freshness of a great wine from Roussillon
The estate
Officially founded in 1985 by Gérard Gauby, Domaine Gauby has profoundly transformed the winegrowing landscape of Roussillon. Located in the commune of Calce, the estate spans a property where 45 hectares of vines coexist with preserved wild nature. A pioneer of viticulture respectful of living ecosystems and agroforestry, the estate is renowned for its wines of great elegance. Since 2023, François Baulé and Yann Mazabraud have been the current owners of this institution, passionately carrying on the philosophy of minimal intervention and the authentic expression of this exceptional terroir.
The vineyard
Classified as IGP Côtes Catalanes, this wine comes from plots situated between 200 and 400 metres in altitude, swept by the Tramontane wind. The vines, averaging ten to twenty years of age with a few nearly century-old vines, thrive on a complex geological mosaic composed of limestone, chalk, and ferruginous schist. The vineyard is managed according to agroforestry principles, incorporating fruit trees to promote biodiversity and protect the vines.
The vintage
The year was marked by hot weather conditions that posed a real challenge during the harvest in the region. Nevertheless, this climate made it possible to harvest perfectly healthy berries, with optimal ripeness and a particularly pronounced aromatic expression.
Winemaking and aging
The grapes are hand-harvested with rigorous sorting. Fermentation of the "Les Calcinaires" 2022 cuvée takes place with whole bunches, without destemming, relying exclusively on indigenous yeasts, in concrete and stainless steel vats. Aging then continues for around fifteen months, split 80% in concrete vats to preserve the purity of the fruit, and 20% in oak barrels to bring subtle complexity.
