The vines at Domaine Gauby are planted on a real mosaic of a terroir. Between limestones, schists, round stones and clay-limestone soils, these 5- to 90-year-old vines are cultivated organically and polyculturally. The estate is certified in organic farming.
Manual harvests. Sorting at the vine and in the cellar. Traditional vinification in concrete tanks. Maceration in whole bunches. Native yeasts, without external input. Delicate pressing adapted to the vintage and the terroir.
