Palate
The palate reveals itself full-bodied and dynamic, carried by a perfectly balanced structure. The minerality brings a persistent freshness and beautiful tension. The wine stretches out at length before concluding on a saline finish.
Food and wine pairing
This wine pairs perfectly with seafood such as spiny lobster or shrimp in lemon butter. It also goes wonderfully with fine fish, whether smoked or served in a creamy sauce, as well as delicate white meats with mushrooms. On the cheese side, it enhances fresh goat cheese or a nuanced blue cheese like Roquefort.

The mineral purity of a white wine from Meursault
The estate
The family's winemaking history began in the early twentieth century in Burgundy, but it was in 2005 that Domaine Henri Boillot took its current form. Strategically established, the estate oversees a 19-hectare vineyard cultivated without any chemical inputs. Today, Henri Boillot leads the creation of the white wines while his son Guillaume, representing the sixth generation, oversees the reds. The estate is recognized for its non-interventionist approach and its quest for the precise expression of each terroir.
The vineyard
The Premier Cru-classified plot from which this wine originates is located within the Meursault appellation. South-facing, this climat takes its name from its particularly stony soil. The vines flourish on a geological substrate composed of marl and Jurassic limestone, cultivated according to the principles of strict sustainable farming, without synthetic fertilizers or pesticides, with deliberately limited yields.
The vintage
The year was marked by particularly challenging weather conditions. These climatic events had a significant impact on the growing cycle, leading to a substantial drop in yields, limited to around 60% of a typical harvest.
Winemaking and aging
This Meursault 1er Cru "Les Poruzots" 2024 comes from grapes harvested late to achieve optimal concentration. In the cellar, the philosophy is minimally interventionist, with whole-bunch pressing and fermentation without any lees stirring. The wine is then aged for a period of twelve to eighteen months in oak barrels with a capacity of 350 litres, with a variable proportion of new wood or wood previously used for one vintage, in order to preserve the identity of the terroir.
