Characteristics and Tasting Notes for the Bourgogne Pinot Noir 2023 from Domaine Nicolas Rossignol
Tasting
Colour
With a brilliant ruby red hue and remarkable intensity, it reflects a measured extraction and fruit of exceptional quality.
Nose
Generous and harmonious, the aromatic bouquet opens with ripe red fruit aromas such as cherry, raspberry and blackcurrant. It is enriched with delicate floral touches of violet, sweet spices and notes of undergrowth, all underscored by a subtle oakiness reminiscent of vanilla.
Palate
The palate offers a perfectly balanced structure, combining round, fruity flesh with lovely vibrancy. The tannins are silky and delicate. The remarkably persistent finish stands out for its elegant mineral tension, which brings volume and length.
Food and Wine Pairing
This red wine pairs wonderfully with grilled or braised red meats, roast poultry or feathered game. It also complements Asian dishes with umami notes, as well as soft-rind aged cheeses such as Époisses or Comté.
Service and Storage
This Domaine Nicolas Rossignol Bourgogne Pinot Noir 2023 shows fine ageing potential and can be enjoyed until at least 2030.
The Authentic Expression of a Great Terroir by Domaine Nicolas Rossignol
The Estate
Founded in 1997, the Domaine Nicolas Rossignol has established itself as a key reference in Burgundy. Representing the fifth generation of a family of winegrowers from Volnay, Nicolas Rossignol, the current owner, runs this estate, whose vineyard now spans seventeen hectares. Based in Beaune, the estate stands out for its terroir-respectful philosophy, combining sustainable farming practices with close attention to lunar cycles. Praised for its excellence, the estate produces authentic, pure and elegant wines that precisely reflect the richness of Burgundy's climats.
The Vineyard
This Bourgogne wine comes from a mosaic of plots spread across the Côte de Beaune, particularly in the villages of Volnay and Pommard. The vines thrive on clay-limestone soils of Jurassic origin, sometimes rich in iron or stony, providing excellent drainage. The estate favours sustainable viticulture, free from chemical herbicides, promoting soil tillage to stimulate underground biodiversity and encourage deep root growth in the vines.
The Vintage
The year 2023 stood out for its optimal weather conditions, offering an ideal growing cycle. Generous sunshine, combined with the absence of significant water stress, allowed for even and perfect ripening of the berries, resulting in an exceptionally high-quality harvest for this Domaine Nicolas Rossignol Bourgogne Pinot Noir.
Winemaking and Ageing
Hand-harvesting in small crates is followed by a rigorous double sorting process. For this Domaine Nicolas Rossignol Bourgogne Pinot Noir 2023, fermentation is triggered using indigenous yeasts, accompanied by measured punching down and pumping over. Ageing takes place on fine lees, without racking, in French oak barrels for ten to twenty months. Malolactic fermentation is deliberately delayed until the following spring to refine the structure and aromatic complexity.
Grape Variety
Pinot Noir (100%).
