Rather earthy Gevrey with meat, dried strawberries and bark. Some forest floor. Light barnyard. Medium-bodied with ripe fruit and round, ripe tannins that are well integrated. Very attractive now, but can age.

The structure and complexity of a Gevrey-Chambertin 1er cru wine

The property

The Domaine René Bouvier, founded in 1910 in Marsannay, covers 30 hectares in Burgundy, mainly in the Côte-de-Nuits. Currently led by Bernard Bouvier, representing the third generation, the estate has experienced significant expansion, notably with the acquisition of prestigious vineyards. Since 2009, it has practiced organic viticulture, certified since 2013, and uses traditional and innovative methods in winemaking. The estate is recognized for the quality of its wines, particularly its pinot noirs.

The vineyard

The Gevrey-Chambertin 1er cru "Combe au Moine" is made from a 0.30 ha vineyard with vines averaging 40 years old.

Vinification and aging

Hand-harvested and then rigorously sorted on the table, the selected grapes undergo vinification in thermo-regulated vats, with about 50% whole bunches (variable proportion depending on the vintage). Fermentation is carried out with indigenous yeasts, favoring an infusion approach rather than mechanical extraction. Only the first press juices are kept. Aging lasts about 18 months in oak barrels, 20% of which are new. Bottling is done with a minimum of SO2, following the lunar calendar.
