The vinification and ageing
The hand-picked grapes are rigorously sorted in order to keep only the highest quality grapes. Fermentation for about 10 days followed by maceration for one month. Malolactic fermentation and racking. Aged in 30 hl French and Austrian oak barrels for 15 months, followed by a few months of additional bottle ageing before being released onto the market, in order to develop the aromatic expression and elegance of this wine.
