Tasting
Colour
The colour reveals a pale yellow hue subtly shifting towards straw, illuminated by delicate golden highlights, reflecting beautiful visual purity.
Nose
The aromatic bouquet opens delicately with floral notes reminiscent of acacia, jasmine and orange blossom. It is then enriched with white fruit aromas such as pear, white peach and lemon, occasionally nuanced with light honeyed and spicy touches.
Palate
The palate stands out for its vibrant freshness and pronounced mineral structure. The fruity substance, full-bodied yet never heavy, is perfectly balanced by a thirst-quenching acidity. The finish, velvety and juicy, lingers on a subtle saline note.
Food and wine pairing

The authentic, mineral expression of a great white Burgundy
The estate
Officially founded in 1920, the family estate is now run by Jean-Charles Fagot. Located in Corpeau, in the heart of Burgundy, this three-to-four-hectare property stands out for its authentic and approachable style. After a career as a professional musician, Jean-Charles Fagot took over in 1996, combining his work as a winegrower with that of a restaurateur. The estate favours environmentally friendly viticulture to produce honest, convivial wines that faithfully reflect the richness of their native terroirs.
The vineyard
This Bourgogne comes from high-altitude plots situated between 290 and 485 metres, allowing for a slower, more balanced ripening. The vines thrive on south-facing slopes composed of limestone, marl, clay and sandstone soils dating back several million years. The estate practises sustainable farming, including partial horse ploughing to preserve soil vitality, and carries out exclusively manual harvesting to select the finest fruit.
The vintage
The 2023 vintage benefited from particularly favourable weather conditions, marked by generous sunshine and warm temperatures that encouraged excellent sugar concentration. Some rainfall in August provided a welcome balance, allowing the grapes to be harvested at optimal ripeness.
Winemaking and ageing
The making of the Bourgogne Hautes-Côtes de Beaune 2023 follows the purest regional tradition. The juices are vinified in wooden foudres, the large oak vats typical of the region. The wine then undergoes a patient ageing process of twelve to fourteen months in the estate's cellars, allowing it to develop its full aromatic complexity.
