Tasting

Appearance
In its youth, this cuvée typically reveals a pale, luminous yellow robe, often shot through with subtle green and silvery reflections, before evolving towards more golden hues over time.

Nose
The aromatic bouquet opens with beautiful precision, dominated by citrus notes such as lemon and pink grapefruit, accompanied by touches of white flowers and aniseed. The whole is underlined by a highly persistent saline character. As it evolves, more indulgent nuances of honey, wax and butter may emerge.

Palate
The attack reveals ample matter and a velvety, even rounded texture. This wine stands out for its beautiful energy, offering a profile that is both refined and precise. The long, lingering finish is marked by a refreshing salinity typical of its terroir.

Food and wine pairings
This white wine pairs wonderfully with seafood, such as a seafood platter, oysters, or lobster. It also accompanies grilled fish or fish prepared with beurre blanc very well. When it comes to meat, it enhances poultry and white meats served with a cream and mushroom sauce, such as a blanquette de veau.

Serving and cellaring
The Chablis Village "Les Vieilles Vignes de Sainte Claire" 2025 has beautiful ageing potential. It can be cellared and is best enjoyed until around 2033.

The authentic expression of a great Chablis by Jean-Marc Brocard

The estate
Founded in 1974 by Jean-Marc Brocard, this family estate is located in Préhy, in the heart of Burgundy. Today, the domaine is jointly run by the founder and his son Julien Brocard. With nearly 200 hectares of vines, a large part of which is certified organic, this brand has established itself as a key player in the region. The house's philosophy is inspired by the Hippocratic Oath, aiming to preserve the natural balance of living things in order to produce wines that combine precision, power and freshness.

The vineyard
The parcels dedicated to this cuvée are located in the commune of Préhy, within the Chablis appellation. They benefit from a southern exposure and rest on Kimmeridgian soil, composed of marl and limestone rich in marine fossils. The vines, cultivated organically, are around seventy years old. Their roots reach more than twenty-five metres deep into the rock, allowing the plant to draw great mineral complexity and to withstand climatic hazards.

The vintage
The 2025 vintage was marked by climatic conditions that had a significant impact on yields. At the domaine level, the harvest proved particularly small in volume, representing about one third of a usual crop.

Winemaking and ageing
To craft the Chablis Village "Les Vieilles Vignes de Sainte Claire" 2025, alcoholic fermentation is carried out using indigenous yeasts, followed by a full malolactic fermentation. The ageing then takes place entirely in stainless steel tanks, on lees, for a period of twelve months, in order to preserve aromatic purity without any input of wood.
